Air Fryer Tuna Patties (Using Canned Tuna)

Move over tuna sandwiches, air fryer tuna burgers are where it's at when it comes to packing the ultimate lunch box. Super easy to make, and they can also be meal prepped ahead of time, these little tuna patties are cooked in the air fryer and bound to become your new favorite lunchbox main.

Materials

Tuna Patties

  • 12 ounce (95grams) can of tuna in spring water drained and squeezed dry
  • 1 ¼ cup panko breadcrumbs
  • 2 medium eggs
  • 1 spring onion white and light green part, finely chopped
  • 1 tablespoon mayonnaise
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • optional: finely chopped herbs like parsley, chives, or basil

Assembling the Burger

  • 4 hamburger buns (or 8 mini buns)
  • 1 tomato sliced
  • 1 red onion sliced thin
  • lettuce leaves butter, gem or iceberg
  • Dijon mustard and more mayonnaise to spread

Instructions

  • In a medium bowl, mix the tuna, breadcrumbs, eggs, spring onion, mayonnaise, and seasonings until well combined.
    12 ounce (95grams) can of tuna in spring water, 1 ¼ cup panko breadcrumbs, 2 medium eggs, 1 tablespoon mayonnaise, 1 teaspoon Italian seasoning, 1 teaspoon salt, ½ teaspoon onion powder, ½ teaspoon black pepper, optional: finely chopped herbs like parsley, chives, or basil, 1 spring onion
  • Form the mixture into four balls and flatten them into patties similar to a regular burger pattie.
  • Place the patties on a lined plate or small baking tray and put into the freezer for about 10 minutes, or until slightly firm.
  • Preheat the air fryer to 400°F (205C).
  • When the patties feel slightly firm, spray the air fryer basket with nonstick cooking spray (I use fractionated coconut oil). Place the patties in the basket of the air fryer and cook for 12 minutes or until golden brown. You may have to do this in two batches depending on the size of your air fryer.
  • Once cooked, serve the tuna patties on the buns topped with red onion, tomato, lettuce, mayo, and mustard.

Notes

  • Storing: allow cooked patties to cool completely before storing in an airtight container in the fridge for about 3-5 days. Cooled patties can be stored in the freezer for about 2 months and simply thawed and crisped up in the air fryer before serving.
  • Nutritional information: the nutritional information here is for the tuna patties only. Not for the burger ingredients.
  • Dry/Wet mixture: if your mixture is too dry then add another egg. If it is too wet then add more tuna or more panko breadcrumbs.
  • Additions: feel free to add any extra herbs you have in the fridge or garden, Parsley, chives, basil, spring onions, etc all work well in this mix.
  • Batch cooking: You may have to cook the patties in two batches depending on the size of your air fryer. My air fryer has two tiers so I tend to do two tuna patties on each layer.
