    Carrot Cake Balls

    A fun addition to the lunch box, these carrot cake balls will have everyone counting down the minutes until lunch comes along. Simply smush up a carrot cake, mix it with cream cheese, and then dip it in white chocolate, and top it off with a cute little carrot or some Easter-themed sprinkles (affiliate link). So easy that the kids can probably do it themselves with minimal supervision.

    🧁 Carrot Cake Pop Balls

    Imagine how excited the kids will be to pop open their lunchboxes knowing that this little treat is waiting for them!

    So fun and easy to make, the kids will love helping you whip up a batch of these carrot cake balls to enjoy over the Easter period.

    They will be the envy of the playground 😊

    🧂 Ingredients You Need

    We are keeping the ingredients to a minimum here, to make sure it is nice and easy, and doesn't become a chore.

    You are going to need:

    • One carrot cake: I used a box mix carrot cake, but you can use one already made from the store to speed things up. If you get one topped with cream cheese icing, feel free to use that and just that and top up with extra cream cheese to make up the amount called for in the recipe. Just be mindful that it will make the cake balls that bit sweeter.
    • a block of cream cheese: take this out from the fridge and allow it to come to room temperature for about 30 minutes before getting started. This will make it so much easier to work with.
    • white chocolate melts: get the variety that easily melts in the microwave, we do not want to be dealing with any double boiler nonsense.
    • orange candy melting wafers: if you are finding it hard to source these (in Australia I can only find them in one specialty store unless it's close to Halloween), simply use more white chocolate melts, and add in a wee bit of orange food coloring.
    • green food coloring: dark green or pastel, it's up to you.

    You will also need some piping bags for making the little carrots.

    TIP: If you don't have a piping bag then just use a Ziploc bag with the corner snipped off and you will be all good.

    🥕 Don't want to bother with the fiddly carrots? 🥕

    Just grab some Easter-themed sprinkles (affiliate link) instead, the kids won't care!

    Keep it simple and buy a premade carrot cake, or make up a boxed version.

    📋 How To Make Carrot Cake Balls

    Now I told you this was easy, and I am not lying...

    But it is a wee bit fiddly.

    Grab your room-temperature cream cheese and whip it up with the paddle attachment in a stand mixer.

    Smoosh up the carrot cake and crumble it in slowly at a low speed, so that it incorporates properly with the cream cheese.

    When it's all nice and mixed together, pop the whole mixture into the freezer. You don't want to miss this step, it makes it so much easier to roll the mix into balls if it is slightly frozen.

    Roll into even-sized balls.

    While the carrot cake balls are getting all freezie you will want to make the cute little carrots.

    Simply melt some of the white chocolate and add a couple of drops of green food coloring to reach the color consistency you are after.

    Pop the mixture into a piping bag and set aside.

    Do the same thing with your orange candy melts. Like I said, if you can't find orange candy melts then just melt some more white chocolate and mix in some orange food coloring.

    Use the piping bags to pipe little carrot shapes onto a baking sheet lined with parchment paper.

    They don't have to be perfect.

    Mine certainly aren't 😂

    Use a toothpick to roll cake balls in melted white chocolate
    Use a toothpick to cover balls in chocolate.

    Now pop the little carrots aside to harden up, and start rolling the carrot cake mix into balls slightly smaller in size than a golf ball.

    Pop them back into the freezer while you melt the white chocolate.

    You want them to be quite frozen, as this stops them from falling apart while you dip them in the melted chocolate.

    Use a toothpick to dip the cake balls into the melted white chocolate, ensuring they are completely covered.

    Pop on the cute little carrots quickly, before the white chocolate has hardened and you are good to go.

    💭 Important Teaching Tips

    If the cake balls are out of the freezer for too long you may find it hard to roll them in the melted chocolate.

    If this happens simply pop them back into the freezer for about 15 minutes and then start rolling again.

    If the little carrots seem too fiddly, simply swap them for some sprinkled and you are good to go.

    Materials

    • 1 9x13 carrot cake (about 400g)
    • 8 oz (225g) block cream cheese room temp
    • 16 oz (450g) white chocolate melts
    • 1 cup orange candy melts
    • Green food coloring

    Instructions

    • Add cream cheese to the bowl of an electric mixer and beat until smooth and creamy.

    • Crumble the cake and add to the mixing bowl in 1-cup increments.

    • Put the mixture in a freezer-safe bowl, cover with plastic wrap, and place in the freezer for about 15 minutes. This makes the mixture easier to roll.
    • After the 15 minutes are up, take the mixture out of the freezer, roll it into approximately 30 balls, and place them on a baking sheet lined with parchment paper. Freeze the balls for 15 more minutes.
    • Melt ¼ cup of the white chocolate melts in the microwave for 30-second intervals until fully melted, stirring after each interval. Add a drop of green food coloring and mix to combine. Set aside.

    • Melt the orange wafers in the microwave for 30-second intervals until fully melted, stirring after each interval.
      1 cup orange candy melts
    • Spoon the melted wafers into two separate piping bags and snip a TINY tip off each bag. If you do not have a piping bag simply use a Ziploc bag.
    • Pipe 30 small orange carrots onto a baking sheet lined with parchment paper, and top each one with small green leaves. Place the baking sheet in the freezer and freeze until solid - about 5 minutes (see pictures in post for inspiration).
    • Melt the remaining white chocolate melts in the microwave in 30-second intervals until fully melted, stirring after each interval.
    • Remove the cake balls from the freezer, drop one into the melted white chocolate, and roll it around to coat fully. I use two forks to roll it around to prevent mess.
    • Remove the coated cake ball with a toothpick, carefully place it back onto the baking sheet, and immediately top it with a candy carrot before the chocolate hardens.
    • Repeat until all the cake balls are coated and topped with a carrot.
    • Allow all candy to harden fully and store leftovers in the refrigerator.

    Notes

    Tips
    If the chocolate begins to harden while dipping the cake balls, microwave for 10 seconds at a time until it thins out to the desired consistency.
    If the cake balls begin to soften too much while dipping them, place them back in the freezer for 5-10 minutes to allow them to harden again.

      This was my first time making cake balls and they were so delicious! I wanted to try them before I make them for our Easter dinner and they were great! I am definitely making them again for Easter!
